French cuisine that reflects the seasonal bounty of Ise-Shima
The ancient province of Ise is described in the Nihon Shoki, Japan’s second-oldest historical record, as umashi kuni (a beautiful land). The Shima area in particular is renowned for its produce, and was once a miketsu kuni, sending offerings of foodstuffs to the Imperial household and court. Our cuisine makes lavish use of unique local ingredients such as spiny lobsters, ormers, and beef from neighbouring Matsusaka.
